Beef, pork and deer — cut the way you want it. Every animal is kept separate from drop-off to pickup, so what you take home is what you brought in.

What we process

Three kinds of work, one standard.

Each group below is cut to your sheet, vacuum sealed and labeled. Call for beef and pork processing rates; deer pricing is posted.

Whole · Half · Quarter

Beef

Whole, half or quarter beef cut to your sheet. We hang and age before cutting, then vacuum seal and label every package.

  • Steaks cut to your thickness
  • Roasts — chuck, arm, rump, sirloin tip
  • Ground beef to your lean preference
  • Soup bones, cube steak, stew meat
  • Dry aging to your preferred number of days

Whole · Half

Pork

Whole and half hogs. Hams, bacon and jowl cured and smoked on site — not sent out.

  • Chops cut to thickness
  • Hams and bacon cured and smoked here
  • Sausage ground to your seasoning
  • Ribs, shoulders, butt roasts
  • Lard rendering on request

Wild game

Deer

Our busiest work, every fall. Skinning through freezing, plus specialty items made in house.

  • Standard cut, wrap and freeze
  • Summer sausage — original or jalapeño & cheddar
  • Sliced jerky, fajita meat and stew meat
  • Caping and euro mounts
  • Ground with beef or pork trim

Custom processing

How custom processing works

We're a custom-exempt shop: we process the animal you already own, and it goes home to you.

    You bring the animal you own

    Beef, hog or deer — it comes off your trailer or your tailgate, and it stays yours the whole way through.

  2. 02

    It's tagged and kept separate

    Every animal gets its own tag at drop-off and hangs, cuts and freezes on its own. Nothing is pooled.

  3. 03

    Cut to your sheet

    Steak thickness, roast sizes, how lean the grind, what gets smoked or made into sausage — you decide, we cut.

  4. 04

    Labeled and boxed for pickup

    Custom beef and pork come back labeled “Not for Sale,” which is what the law requires for custom processing.
